Ingredients:

1 head of cauliflower, cut into florets
1 can of chickpeas, drained and rinsed
1 bunch of radishes, sliced
2 tablespoons of olive oil
1 teaspoon of garlic powder
1 teaspoon of dried oregano
1 teaspoon of dried basil
1/2 teaspoon of salt
1/4 teaspoon of black pepper
Juice of 1 lemon
2 tablespoons of minced garlic

Cooking Instructions:

Preheat oven to 400 degrees F.
Place cauliflower florets, chickpeas, and radishes on a baking sheet.
Drizzle with olive oil and sprinkle with garlic powder, oregano, basil, salt, and pepper.
Roast in the oven for 25 minutes, stirring halfway through.
Meanwhile, in a small bowl, whisk together lemon juice and minced garlic.
Once the vegetables are done roasting, transfer to a large bowl and pour the lemon garlic dressing over top.
Toss to combine and serve.
