Ingredients:

2 large carrots, peeled and cut into 1
inch cubes
1 cup quinoa, cooked according to package instructions
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and pepper to taste
2 tablespoons honey mustard dressing (store bought or homemade)

Cooking Instructions:

Preheat oven to 375°F.
Place the carrots on a baking sheet lined with parchment paper. Drizzle with olive oil and season with garlic powder, salt and pepper.
Roast in the oven for 25 minutes or until the carrots are tender and lightly browned.
In a large bowl combine the cooked quinoa and roasted carrots. Add the honey mustard dressing and mix until everything is evenly coated.
Serve warm or cold as desired. Enjoy!
