Ingredients:

1 head of broccoli, cut into florets
2 tablespoons of olive oil
2 cloves of garlic, minced
1/4 teaspoon of salt
1/4 teaspoon of black pepper
1/4 cup of feta cheese, crumbled
2 tablespoons of lemon juice
1 tablespoon of honey
1 tablespoon of Dijon mustard

Cooking Instructions:

Preheat oven to 400°F (200°C).
Place the broccoli florets on a baking sheet and drizzle with olive oil.
Sprinkle with garlic, salt, and pepper.
Roast in the oven for 20 minutes, stirring halfway through.
In a small bowl, whisk together the lemon juice, honey, and Dijon mustard.
Once the broccoli is done roasting, transfer to a bowl and add the feta cheese.
Drizzle the lemon vinaigrette over the broccoli and feta and toss to combine.
