Ingredients:

1 cup of spinach leaves
1/2 cup of red cabbage, shredded
1/2 cup of carrots, shredded or julienned
1/4 cup of red bell pepper, diced
1/4 cup of yellow bell pepper, diced
1/4 cup of cucumber, diced
2 tablespoons of olive oil
2 tablespoons of lemon juice

Cooking Instructions:

In a large bowl combine the spinach leaves, red cabbage, carrots, red bell pepper, yellow bell pepper and cucumber. Mix until all ingredients are evenly distributed.
In a small bowl whisk together the olive oil and lemon juice until combined. Pour over the salad and mix until all ingredients are evenly coated with the dressing.
Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
