Ingredients:

1 cup quinoa, cooked according to package instructions
2 small zucchinis, sliced into thin rounds
2 large tomatoes, diced into small cubes
2 tablespoons olive oil
Salt and pepper to taste
Juice of 1 lemon
1 tablespoon honey or agave nectar (optional)

Cooking Instructions:

Preheat oven to 375°F (190°C).
Place the sliced zucchini on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast in preheated oven for 15 minutes.
In a large bowl, combine the cooked quinoa, diced tomatoes, roasted zucchini rounds, remaining tablespoon of olive oil, lemon juice and honey or agave nectar (if using). Mix until all ingredients are evenly distributed.
