Ingredients:

½ cup quinoa
1 small zucchini, sliced into thin rounds
1 small eggplant, sliced into thin rounds
2 tablespoons olive oil
Salt and pepper to taste For the Tomato Vinaigrette:
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon tomato paste
1 teaspoon honey
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Place the quinoa in a medium saucepan over medium-high heat. Add 1 cup of water and bring to a boil. Reduce heat to low, cover the pan with a lid, and simmer for 15 minutes or until all the water is absorbed. Remove from heat and set aside.
Place the zucchini and eggplant slices on the prepared baking sheet in an even layer. Drizzle with olive oil and season with salt and pepper to taste. Roast for 15 minutes or until golden brown on both sides.
To make the vinaigrette, whisk together olive oil, balsamic vinegar, tomato paste, honey, salt, and pepper in a small bowl until combined.
In a large bowl combine cooked quinoa with roasted vegetables then pour over vinaigrette dressing mix well to combine all ingredients together evenly . Serve warm or cold as desired .
