Ingredients:

2 tablespoons of soy sauce
1 tablespoon of mirin (sweet cooking rice wine)
1 tablespoon of sake (rice wine)
1 teaspoon of sugar or honey
1 teaspoon of grated ginger root (optional)

Cooking Instructions:

In a small saucepan over medium heat, combine the soy sauce, mirin, sake and sugar or honey. Stir until the sugar is dissolved.
Bring the mixture to a boil and then reduce the heat to low. Simmer for about 5 minutes until the sauce has thickened slightly.
Remove from heat and stir in the grated ginger root if desired.
Let cool before using as a marinade or dipping sauce.
