Ingredients:

200g lean beef mince
1 tablespoon soy sauce
1 teaspoon garlic powder
1 teaspoon ground ginger
2 tablespoons water
2 cups fresh spinach leaves, chopped
1/2 cup diced onion
1/2 cup diced red bell pepper

Cooking Instructions:

Heat a large non-stick skillet over medium heat. Add the beef mince and cook until browned.
Add the soy sauce, garlic powder, ground ginger and water to the pan and stir to combine. Cook for another minute or two until the liquid has reduced slightly.
Add the spinach leaves, onion and bell pepper to the pan and stir to combine. Cook for another 3-4 minutes until the vegetables are tender.
Serve hot with your favorite side dish or over cooked rice or noodles. Enjoy!
