Ingredients:

1 chicken thigh or breast (skinless and boneless)
1 tablespoon olive oil
1 small onion (diced)
2 cloves garlic (minced)
2 tablespoons tomato paste
1/2 cup white wine or chicken broth
1/2 teaspoon paprika
1/4 teaspoon ground cumin
Salt and pepper to taste
2 medium potatoes (peeled and diced)

Cooking Instructions:

Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown on both sides, about 5 minutes per side. Remove from the skillet and set aside.
Add the onion to the skillet and cook until softened, about 3 minutes. Add the garlic and cook for an additional minute.
Stir in the tomato paste, white wine or chicken broth, paprika, cumin, salt and pepper to taste. Bring to a simmer then add the potatoes.
Return the chicken to the skillet and reduce heat to low. Cover with a lid and simmer for 25-30 minutes or until potatoes are tender when pierced with a fork.
Serve hot with your favorite sides such as rice or vegetables!
