Ingredients:

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
2 tablespoons tomato paste
2 cups chicken broth or stock
2 large potatoes, peeled and cut into cubes
2 carrots, peeled and cut into cubes
1/2 cup frozen peas
1 pound boneless skinless chicken thighs or breasts, cut into cubes

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the paprika, cumin and coriander to the pot and stir to combine. Cook for another minute until fragrant.
Add the tomato paste to the pot and stir to combine. Cook for another minute until fragrant.
Pour in the chicken broth or stock and bring to a boil over high heat. Once boiling reduce heat to low and add in the potatoes, carrots and peas. Simmer for 15 minutes until vegetables are tender.
Add in the chicken cubes and simmer for an additional 15 minutes until cooked through. Taste for seasoning and adjust if necessary with salt or pepper before serving hot with crusty bread or rice if desired!
