Ingredients:

1 chicken breast (skinless and boneless)
2 potatoes (peeled and diced)
1 onion (diced)
2 cloves garlic (minced)
2 tablespoons olive oil
1 teaspoon paprika
½ teaspoon ground cumin
½ teaspoon ground coriander seed
¼ teaspoon ground black pepper
¼ teaspoon dried oregano
¼ teaspoon dried thyme

Cooking Instructions:

Preheat oven to 350°F/180°C.
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the paprika, cumin, coriander seed, black pepper, oregano and thyme to the skillet and cook for another minute or two until fragrant.
Add the diced potatoes to the skillet and cook for another 5 minutes or until lightly browned.
Place the chicken breast in an oven-safe baking dish and top with the potato mixture from the skillet. Bake in preheated oven for 30-35 minutes or until chicken is cooked through and potatoes are tender.
