Ingredients:

1/2 cup white beans, soaked overnight and drained
1/4 cup diced onion
1/4 cup diced red bell pepper
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon paprika
1/4 teaspoon ground cumin
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a medium saucepan over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
Add the garlic and cook for an additional minute.
Add the beans, paprika, cumin, salt and pepper to the pan and stir to combine. Cook for an additional 2 minutes.
Add 1 cup of water to the pan and bring to a boil. Reduce heat to low and simmer for 15 minutes or until beans are tender. Serve hot with your favorite accompaniments.
