Ingredients:

1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
1/2 teaspoon turmeric powder
400g peeled and deveined shrimp
400ml coconut milk
2 tablespoons tomato paste

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the cumin, coriander, paprika and turmeric and cook for 1 minute more.
Add the shrimp and cook for 2 minutes until they start to turn pink.
Pour in the coconut milk and tomato paste and stir to combine. Bring to a simmer and cook for 10 minutes until the sauce has thickened slightly.
Serve with steamed rice or crusty bread for a delicious meal!
