Ingredients:

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1/2 teaspoon paprika
1/4 teaspoon ground cumin
2 cups chicken broth or stock
1 cup cooked chicken, shredded or diced
1/2 cup long grain white rice
2 carrots, peeled and diced
2 celery stalks, diced
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened. Stir in the paprika and cumin.
Pour in the chicken broth or stock and bring to a boil. Add the chicken, rice, carrots, celery stalks and season with salt and pepper to taste. Reduce heat to low and simmer for 20 minutes or until the rice is cooked through.
Serve hot with crusty bread or crackers if desired. Enjoy!
