Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 potatoes, peeled and diced into small cubes
1/2 teaspoon smoked paprika
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander seed
500ml vegetable stock or water
100g kale leaves, chopped
100g chorizo sausage, diced

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened (about 5 minutes).
Add the potatoes to the pot and stir to combine. Cook for another 5 minutes until the potatoes are lightly browned.
Add the smoked paprika, cumin and coriander seed to the pot and stir to combine. Cook for another minute until fragrant.
Pour in the vegetable stock or water and bring to a boil. Reduce heat to low and simmer for 15 minutes until the potatoes are tender.
Add the kale leaves and chorizo sausage to the pot and stir to combine. Simmer for another 5 minutes until everything is cooked through.
Serve hot with crusty bread or crackers on the side if desired! Enjoy!
