Ingredients:

200g squid, cut into small pieces
1 onion, finely chopped
2 cloves garlic, minced
1 red pepper, diced
1 cup long
grain white rice
2 cups vegetable stock or water
2 tablespoons olive oil
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened.
Add the red pepper and squid and cook for a few minutes until the squid is lightly browned.
Add the rice and stir to combine with the vegetables. Pour in the vegetable stock or water and season with salt and pepper to taste. Bring to a boil then reduce heat to low and simmer for 20 minutes or until the rice is cooked through.
Serve hot with your favorite accompaniments such as lemon wedges or parsley sprigs.
