Portuguese Arroz de Carneiro

Ingredients:

250g lamb shoulder, cubed
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 teaspoon smoked paprika
1 teaspoon ground cumin
½ teaspoon ground coriander seed
½ teaspoon dried oregano
¼ teaspoon ground cinnamon
200g long grain white rice
400ml chicken stock

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the cubed lamb and cook until lightly browned on all sides. Remove from the pan and set aside.
Add the onion and garlic to the pan and cook until softened. Then add the bell pepper and cook for another 3 minutes.
Add the spices to the pan and stir to combine. Then add the rice and stir to coat in the spices.
Pour in the chicken stock and bring to a boil. Reduce heat to low and simmer for 20 minutes or until most of the liquid has been absorbed by the rice.
Return the cooked lamb to the pan and stir to combine with the rice mixture. Simmer for an additional 10 minutes or until all of the liquid has been absorbed by the rice and it is cooked through.
Serve hot with your favorite accompaniments such as a green salad or roasted vegetables!
