Ingredients:

125g butter, softened
125g peanut butter
100g light brown sugar
50g caster sugar
1 egg, beaten
1 teaspoon vanilla extract
250g plain flour
1 teaspoon baking powder
½ teaspoon bicarbonate of soda
100g pretzels, crushed

Cooking Instructions:

Preheat the oven to 180°C/160°C fan/Gas Mark
Line two baking trays with parchment paper.
In a large bowl, cream together the butter and peanut butter until light and fluffy. Add the sugars and beat until combined. Beat in the egg and vanilla extract until fully incorporated.
In a separate bowl, sift together the flour, baking powder and bicarbonate of soda. Gradually add this to the wet ingredients until a dough forms. Stir in the crushed pretzels until evenly distributed throughout the dough.
Roll tablespoonfuls of dough into balls and place on the prepared baking trays, leaving enough space between each cookie for them to spread during cooking. Bake for 10 minutes or until golden brown around the edges. Allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
