Ingredients:

125g plain flour
1 teaspoon baking powder
½ teaspoon salt
60g butter, softened
60g peanut butter, smooth or crunchy
80g caster sugar
1 egg yolk
2 tablespoons milk
2 tablespoons jam or jelly of your choice

Cooking Instructions:

Preheat the oven to 180°C/350°F/Gas Mark
Line a baking tray with parchment paper.
In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
In a large bowl, cream together the butter and peanut butter until light and fluffy. Add the sugar and mix until combined. Add the egg yolk and mix until combined. Add the milk and mix until combined.
Gradually add in the dry ingredients to the wet ingredients until a dough forms.
Roll tablespoon-sized balls of dough into your hands then place them onto the prepared baking tray about 2 inches apart from each other. Using your thumb or a spoon, make an indentation in each cookie ball then fill it with jam or jelly of your choice (about ½ teaspoon).
Bake for 12-15 minutes or until golden brown on top then remove from oven and let cool completely before serving. Enjoy!
