Ingredients:

1/2 cup all
purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons peanut butter
2 tablespoons jelly or jam of your choice
1/2 cup almond milk (or other non
dairy milk)
2 tablespoons vegetable oil or melted butter
1/2 cup fresh fruit of your choice (blueberries, strawberries, etc.)

Cooking Instructions:

In a medium bowl, whisk together the flour, baking powder, and salt.
In a separate bowl, mix together the peanut butter and jelly until combined.
Add the almond milk to the peanut butter mixture and stir until combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix!
Heat a large skillet over medium heat and add the vegetable oil or melted butter.
Drop about ¼ cup of batter onto the skillet for each pancake. Cook for about 2 minutes on each side or until golden brown.
