Ingredients:

2 tablespoons of peanut butter
1 banana (mashed)
1/2 cup of all
purpose flour
1 teaspoon of baking powder
1/4 teaspoon of salt
2 tablespoons of sugar or honey (optional)
1/2 cup of almond milk or other plant
based milk
2 tablespoons of vegetable oil or melted butter For Toppings:
Almond milk
Fresh fruit (sliced)
Granola
Mixed berries
Honey or maple syrup

Cooking Instructions:

In a medium bowl mix together the peanut butter and mashed banana until well combined.
In a separate bowl whisk together the flour, baking powder and salt.
Add the sugar or honey to the wet ingredients and mix until combined.
Slowly add the dry ingredients to the wet ingredients while stirring until just combined. Do not overmix!
Heat a non-stick pan over medium heat and add a tablespoon of oil or melted butter to the pan.
Pour about ¼ cup of batter onto the pan for each pancake and cook for about 2 minutes on each side until golden brown.
Serve pancakes with almond milk, fresh fruit slices, granola mixed berries and honey or maple syrup on top as desired!
