Ingredients:

60g butter, softened
50g peanut butter
50g caster sugar
1 egg yolk
1 teaspoon vanilla extract
100g plain flour
½ teaspoon baking powder
40g flaked almonds

Cooking Instructions:

Preheat the oven to 180°C/350°F/Gas Mark
Grease two baking trays with butter or line with parchment paper.
In a large bowl, cream together the butter and peanut butter until light and fluffy. Add the sugar and mix until combined. Beat in the egg yolk and vanilla extract until well blended.
In a separate bowl, sift together the flour and baking powder. Gradually add this to the creamed mixture until fully incorporated. Stir in the flaked almonds until evenly distributed throughout the dough.
Roll tablespoons of dough into balls and place onto prepared baking trays, leaving enough space between each cookie for them to spread during baking. Flatten each ball slightly with your fingers or a fork dipped in flour if desired.
Bake for 12-15 minutes or until golden brown around the edges but still soft in the middle when lightly pressed with your finger tip. Allow to cool on trays for 5 minutes before transferring to wire racks to cool completely before serving or storing in an airtight container for up to 3 days.
