Ingredients:

30g whole wheat flour
15ml vegetable oil
15ml honey or maple syrup
30ml pumpkin puree
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
Pinch of ground nutmeg and ground ginger

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a small loaf pan with butter or oil.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and ginger.
In a separate bowl, mix together the oil, honey or maple syrup and pumpkin puree until combined.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix!
Pour the batter into the prepared loaf pan and bake for 25 minutes or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing and serving. Enjoy!
