Ingredients:

60ml vegetable oil
1 large egg
120ml buttermilk or plain yogurt
75g whole wheat flour
75g cornmeal
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt

Cooking Instructions:

Preheat oven to 200°C. Grease an 8-inch round cake pan with the vegetable oil.
In a medium bowl, whisk together the egg, buttermilk or yogurt and vegetable oil until combined.
In a separate bowl, mix together the whole wheat flour, cornmeal, baking powder, baking soda and salt until combined.
Add the dry ingredients to the wet ingredients and mix until just combined (do not overmix).
Pour the batter into the prepared cake pan and bake for 25 minutes or until a toothpick inserted into the center comes out clean. Allow to cool before serving.
