Ingredients:

2 large eggs
1/4 cup shredded cheese of your choice
2 slices of ham or bacon (optional)
1/4 cup diced bell peppers or other vegetables of your choice
2 tablespoons salsa of your choice
1/4 avocado sliced or diced (optional)
1 tablespoon fresh herbs of your choice (optional)
1/2 cup almond milk

Cooking Instructions:

Heat a non-stick skillet over medium heat. Add the eggs and scramble until cooked through. Remove from the heat and set aside.
Add the shredded cheese to the skillet and spread it out evenly. Top with the scrambled eggs and ham or bacon if using.
Sprinkle the diced bell peppers or other vegetables over the top and then add the salsa. Cover with a lid and cook for 5 minutes until everything is heated through and the cheese is melted.
Remove from heat and top with avocado slices or diced avocado if using as well as fresh herbs if desired. Serve with almond milk on the side for a complete meal!
