Ingredients:

2 large eggs
2 tablespoons shredded cheese of your choice
2 tablespoons diced ham
1/4 cup diced bell peppers or other vegetables of your choice
1 tablespoon salsa of your choice
1/4 avocado sliced or diced
1 teaspoon fresh herbs of your choice (e.g. parsley or chives)

Cooking Instructions:

Preheat oven to 375°F (190°C). Grease a small oven-safe skillet with cooking spray or butter.
In a medium bowl whisk together the eggs and cheese until combined.
Add the ham and vegetables to the egg mixture and stir until combined.
Pour the egg mixture into the prepared skillet and spread evenly over the bottom of the pan.
Bake in preheated oven for 20-25 minutes until golden brown and cooked through.
Remove from oven and top with salsa, avocado slices or diced avocado pieces and fresh herbs before serving warm.
