Ingredients:

2 eggs
2 tablespoons of milk
1 tablespoon of olive oil
½ cup of diced bell peppers (any color)
½ cup of diced onion
¼ cup of shredded cheese (any type)
1 teaspoon of dried oregano
1 teaspoon of dried basil
Salt and pepper to taste

Cooking Instructions:

Preheat the oven to 350°F.
In a medium bowl, whisk together the eggs and milk until combined. Set aside.
Heat the olive oil in a small oven-safe skillet over medium heat. Add the bell peppers and onion and cook for 5 minutes or until softened.
Pour the egg mixture into the skillet and stir to combine with the vegetables. Sprinkle the cheese, oregano, basil, salt, and pepper over top. Stir again to combine everything together.
Place the skillet in the preheated oven and bake for 20 minutes or until golden brown on top and cooked through in the center.
Remove from oven and let cool for 5 minutes before serving warm or at room temperature. Enjoy!
