Ingredients:

2 cups vegetable broth
1/2 cup shiitake mushrooms, sliced
1/4 cup carrots, diced
1/4 cup celery, diced
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 teaspoon sesame oil
1 teaspoon fresh ginger, grated
6 vegan wontons

Cooking Instructions:

Add the mushrooms, carrots and celery to the pot and simmer for 5 minutes.
Add the soy sauce, rice vinegar, sesame oil and ginger to the pot and stir to combine. Simmer for an additional 5 minutes.
Add the vegan wontons to the pot and simmer for 10 minutes until cooked through.
