Ingredients:

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 cup diced carrots
1 cup diced celery
½ cup pearl barley
2 cups vegetable broth or stock
½ teaspoon dried thyme
¼ teaspoon dried oregano
¼ teaspoon dried basil
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the carrots and celery to the pot and cook for another 5 minutes.
Add the pearl barley to the pot along with the vegetable broth or stock. Bring to a boil then reduce heat to low and simmer for 20 minutes or until the barley is cooked through.
Add the thyme, oregano, basil, salt and pepper to taste then simmer for another 5 minutes or until all of the vegetables are tender.
Serve hot with your favorite toppings such as fresh herbs or vegan cheese if desired. Enjoy!
