Ingredients:

2 cups vegetable broth
1/2 cup shiitake mushrooms, sliced
1/4 cup carrots, diced
1/4 cup onion, diced
2 tablespoons soy sauce
2 tablespoons mirin
1 teaspoon sesame oil
1 teaspoon grated ginger
2 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
200g udon noodles

Cooking Instructions:

In a large pot over medium heat, add the vegetable broth, shiitake mushrooms, carrots, onion, soy sauce, mirin, sesame oil, ginger, garlic and red pepper flakes (if using). Bring to a boil.
Reduce the heat to low and simmer for 10 minutes.
Add the udon noodles to the pot and cook for an additional 8-10 minutes until the noodles are cooked through.
Serve hot with your favorite toppings such as scallions or sesame seeds. Enjoy!
