Ingredients:

1 tablespoon olive oil
1/2 cup diced onion
1 clove garlic, minced
1/2 teaspoon ground ginger
2 cups vegetable broth
1/2 cup diced carrots
1/2 cup diced celery
2 tablespoons soy sauce
1/4 teaspoon black pepper
4 ounces extra firm tofu, cubed

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the ginger and cook for an additional minute.
Pour in the vegetable broth and bring to a boil. Add the carrots, celery, soy sauce, and black pepper. Reduce heat to low and simmer for 10 minutes or until vegetables are tender.
Add the cubed tofu to the pot and simmer for an additional 5 minutes or until heated through.
