Ingredients:

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1/2 cup carrots, diced
1/2 cup celery, diced
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
2 cups vegetable broth
1/2 cup canned diced tomatoes
1/2 cup cooked cannellini beans or other white beans
2 tablespoons tomato paste
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a medium saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the carrots and celery and cook for another 5 minutes. Stir in the oregano and basil.
Pour in the vegetable broth, tomatoes, beans, and tomato paste. Bring to a boil then reduce heat to low and simmer for 15 minutes or until vegetables are tender.
Season with salt and pepper to taste before serving.
