Ingredients:

1 cup cooked brown rice
1/2 cup diced carrots
1/2 cup diced celery
1/4 cup diced onion
2 cloves garlic, minced
2 cups vegetable broth or stock
1/2 teaspoon dried thyme leaves
1/4 teaspoon ground black pepper
2 tablespoons nutritional yeast flakes
2 tablespoons vegan butter or margarine

Cooking Instructions:

Heat the vegan butter or margarine in a large saucepan over medium heat.
Add the onion, garlic, carrots and celery to the pan and cook for 5 minutes until softened.
Add the vegetable broth or stock to the pan along with the thyme leaves and black pepper. Bring to a boil then reduce heat to low and simmer for 10 minutes.
Add the cooked brown rice to the pan and simmer for an additional 5 minutes until heated through.
Stir in the nutritional yeast flakes and season with salt to taste if desired. Serve hot.
