Ingredients:

1 tablespoon olive oil
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced carrots
2 cloves garlic, minced
2 cups vegetable broth or water
1/4 cup pearl barley
1/4 cup vegan beef crumbles (or other plant
based protein)
2 tablespoons tomato paste
1 teaspoon dried oregano
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion, celery, carrots and garlic and cook for 5 minutes until softened.
Add the vegetable broth or water to the pot along with the pearl barley. Bring to a boil then reduce heat to low and simmer for 15 minutes until the barley is cooked through.
Add the vegan beef crumbles, tomato paste, oregano, salt and pepper to the pot and stir to combine. Simmer for an additional 5 minutes until heated through.
Serve hot with your favorite toppings such as fresh herbs or vegan cheese shreds if desired. Enjoy!
