Ingredients:

100g Udon noodles
1 cup vegetable broth
1 tablespoon soy sauce
1 teaspoon sesame oil
2 cloves garlic, minced
1 teaspoon grated ginger root
2 tablespoons chopped green onion
Salt and pepper to taste

Cooking Instructions:

Bring a pot of water to a boil over high heat. Add the udon noodles and cook for 8-10 minutes until tender. Drain the noodles and set aside.
In a medium saucepan, heat the vegetable broth over medium-high heat. Add the soy sauce, sesame oil, garlic, ginger root, green onion, salt and pepper. Simmer for 5 minutes until fragrant.
Add the cooked udon noodles to the saucepan and simmer for an additional 5 minutes until heated through. Serve hot with additional soy sauce or sesame oil if desired.
