Ingredients:

100g firm tofu, cubed
2 tablespoons vegetable oil
1 tablespoon minced garlic
1 teaspoon grated ginger root
2 tablespoons soy sauce
1 tablespoon rice vinegar or white wine vinegar
2 tablespoons honey or agave syrup (optional)
50g cashew nuts, toasted

Cooking Instructions:

Heat the oil in a wok or large frying pan over medium heat. Add the garlic and ginger and cook for 1 minute.
Add the cubed tofu to the pan and cook for 5 minutes until golden brown.
Add the soy sauce, vinegar, honey (if using) and cashew nuts to the pan and stir fry for a further 5 minutes until everything is heated through.
