Ingredients:

1 cup cooked white rice
2 tablespoons vegetable oil
1/2 cup diced onion
1/2 cup diced bell pepper
1/2 cup diced carrots
1/2 cup diced celery
2 cloves garlic, minced
1/2 teaspoon ground ginger
8 ounces shrimp, peeled and deveined
2 cups chopped bok choy
2 tablespoons soy sauce

Cooking Instructions:

Heat the vegetable oil in a large skillet over medium heat. Add the onion, bell pepper, carrots, celery, garlic and ginger. Cook for 5 minutes until vegetables are softened.
Add the shrimp to the skillet and cook for 3 minutes until they are pink and cooked through.
Add the bok choy to the skillet and cook for an additional 3 minutes until it is wilted.
Add the cooked white rice to the skillet and stir to combine all ingredients together. Cook for 5 minutes until everything is heated through.
Add the soy sauce to the skillet and stir to combine all ingredients together again. Cook for an additional 2 minutes until everything is heated through again.
Serve hot with your favorite sides or toppings!
