Ingredients:

1/2 cup of all
purpose flour
1/4 teaspoon of salt
1 egg, beaten
2 tablespoons of water
1/4 cup of ricotta cheese
2 tablespoons of grated Parmesan cheese
2 tablespoons of chopped fresh parsley
1/4 teaspoon of garlic powder

Cooking Instructions:

In a medium bowl, combine the flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms. Knead for 5 minutes on a lightly floured surface until smooth and elastic. Cover with plastic wrap and let rest for 10 minutes.
Meanwhile, in a small bowl, mix together the ricotta cheese, Parmesan cheese, parsley and garlic powder until combined. Set aside.
Roll out the dough on a lightly floured surface to about 1/8 inch thick. Cut into 3-inch circles using a biscuit cutter or glass. Place about 1 teaspoon of the cheese mixture in the center of each circle. Fold over to form half moons and press edges together to seal tightly with your fingers or a fork.
Bring a large pot of salted water to a boil over high heat and add the ravioli in batches so they don’t stick together. Cook for 5 minutes or until they float to the top and are cooked through. Remove with a slotted spoon and drain on paper towels before serving warm with your favorite sauce or topping!
