Ingredients:

2 tablespoons pumpkin puree
1/4 cup diced apples
1/4 cup diced pears
1/4 cup diced peaches
2 tablespoons honey or maple syrup
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons chopped walnuts or almonds
2 tablespoons granola cereal or oats
1/2 cup plain Greek yogurt
Pinch of salt (optional)
Chopped fresh mint leaves for garnish (optional)

Cooking Instructions:

In a small saucepan over medium heat, combine the pumpkin puree, apples, pears, peaches, honey or maple syrup, cinnamon and nutmeg. Cook for 5 minutes until the fruit is softened. Stir occasionally.
Remove from heat and stir in the chopped nuts. Set aside to cool slightly.
In a bowl combine the granola cereal or oats with the Greek yogurt and a pinch of salt (optional). Mix until combined.
To assemble the dish layer the yogurt mixture in a bowl followed by the fruit compote and top with extra nuts if desired. Garnish with fresh mint leaves if desired. Serve immediately or store in an airtight container in the refrigerator for up to 3 days. Enjoy!
