Ingredients:

75g penne pasta
2 tablespoons olive oil
1/2 onion, finely chopped
2 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional)
1/4 cup vodka or white wine
1/2 cup tomato sauce or passata
1/4 cup heavy cream
Salt and pepper to taste

Cooking Instructions:

Bring a pot of salted water to a boil and cook the penne according to package instructions. Drain and set aside.
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the red pepper flakes if using.
Pour in the vodka or white wine and simmer for 2 minutes until reduced by half.
Add the tomato sauce or passata and simmer for another 5 minutes until thickened slightly.
Stir in the heavy cream and season with salt and pepper to taste. Simmer for another 3 minutes until thickened slightly again.
Add the cooked penne to the skillet and toss to coat with the sauce. Simmer for another 5 minutes until heated through. Serve immediately!
