Ingredients:

2 tablespoons of all
purpose flour
1 tablespoon of granulated sugar
1 tablespoon of light brown sugar
2 tablespoons of creamy peanut butter
1/4 teaspoon of baking powder
1/4 teaspoon of baking soda
Pinch of salt
1 tablespoon of melted butter or margarine
1/2 teaspoon of vanilla extract
1 mini peanut butter cup, chopped into small pieces

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, sugars, baking powder, baking soda and salt.
In a separate bowl, mix together the melted butter or margarine and the peanut butter until combined. Add in the vanilla extract and mix until combined.
Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chopped peanut butter cup pieces.
Using a spoon or cookie scoop, scoop out one cookie dough ball onto the prepared baking sheet and flatten slightly with your fingers or a fork. Bake for 8-10 minutes or until golden brown around the edges. Let cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
