Ingredients:

60g dried tortellini pasta
1/4 cup vegetable broth or water
2 tablespoons vegan cream cheese or vegan buttery spread
2 tablespoons nutritional yeast flakes
1/4 teaspoon garlic powder
Salt and pepper to taste

Cooking Instructions:

Bring a pot of salted water to a boil and add the tortellini pasta. Cook for 8-10 minutes until al dente. Drain the cooked pasta and set aside.
In a small saucepan over medium heat, add the vegetable broth or water and vegan cream cheese or buttery spread. Stir until the cream cheese has melted and combined with the liquid.
Add the nutritional yeast flakes, garlic powder, salt and pepper to taste and stir until combined. Simmer for 3-5 minutes until the sauce has thickened slightly.
Add the cooked tortellini pasta to the saucepan and stir until all of the pasta is coated in sauce. Simmer for an additional 2 minutes before serving warm with freshly cracked black pepper on top if desired.
