Ingredients:

60g dry pasta of your choice
1/2 cup diced bell peppers (any color)
1/4 cup diced onion
1/4 cup vegetable broth or water
2 vegan sausages of your choice (sliced)
2 cloves garlic (minced)
1 teaspoon dried oregano
Salt and pepper to taste

Cooking Instructions:

Bring a pot of salted water to a boil over high heat. Add the pasta and cook according to package instructions. Drain and set aside.
Heat a large skillet over medium heat. Add the bell peppers, onion, garlic, oregano, salt and pepper. Cook for 5 minutes until vegetables are softened.
Add the vegan sausage slices to the skillet and cook for an additional 5 minutes until lightly browned.
Pour in the vegetable broth or water and bring to a simmer for 3-5 minutes until liquid is reduced by half.
Add the cooked pasta to the skillet and stir everything together until combined. Cook for an additional 2-3 minutes until heated through. Taste and adjust seasoning if needed before serving warm with your favorite toppings!
