Ingredients:

1 cup dry green lentils
2 cups vegetable broth or water
1 small onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dried oregano leaves
½ teaspoon ground black pepper
½ teaspoon sea salt

Cooking Instructions:

In a medium saucepan over medium heat, add the lentils and vegetable broth or water. Bring to a boil then reduce heat to low and simmer for 15 minutes.
Meanwhile, in a separate skillet over medium heat add the onion and garlic with a splash of water or vegetable broth. Cook until softened about 5 minutes.
Add the cooked onion and garlic to the lentils along with the cumin, oregano, pepper and salt. Simmer for an additional 5 minutes or until the lentils are tender.
