Ingredients:

150g uncooked pasta of your choice
1/2 cup diced onion
1/2 cup diced bell pepper (any color)
1/2 cup diced celery
2 cloves garlic, minced
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
1/4 teaspoon dried oregano leaves
1/4 teaspoon dried thyme leaves
2 cups vegetable broth or stock
1 can (14.5 oz) diced tomatoes with juice
2 tablespoons tomato paste

Cooking Instructions:

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Heat a large skillet over medium heat. Add the onion, bell pepper, celery, garlic, smoked paprika, cayenne pepper (if using), oregano and thyme leaves. Cook for 5 minutes or until vegetables are softened.
Add the vegetable broth or stock, diced tomatoes with juice and tomato paste to the skillet and stir to combine. Bring to a simmer over medium-high heat and cook for 10 minutes or until sauce has thickened slightly.
Add the cooked pasta to the skillet and stir to combine. Cook for an additional 5 minutes or until heated through.
