Ingredients:

60g uncooked whole wheat pasta
1/2 cup diced red bell pepper
1/2 cup diced yellow onion
1/2 cup diced zucchini
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
1/4 teaspoon cumin powder
1/4 teaspoon smoked paprika powder
2 tablespoons vegetable broth or water
120g cooked chicken breast, shredded or diced

Cooking Instructions:

Bring a pot of salted water to a boil over high heat. Add the pasta and cook according to package instructions. Drain and set aside.
Heat a large skillet over medium heat. Add the bell pepper, onion, zucchini, garlic powder, chili powder, cumin powder and smoked paprika powder. Cook for 5 minutes until vegetables are softened.
Add the vegetable broth or water to the skillet and stir to combine all ingredients together. Cook for an additional 3 minutes until vegetables are tender but still crisp.
Add the cooked chicken breast to the skillet and stir to combine all ingredients together again. Cook for an additional 2 minutes until chicken is heated through.
Add the cooked pasta to the skillet and stir to combine all ingredients together once more. Cook for an additional 2 minutes until everything is heated through and combined well together.
Serve hot with your favorite toppings such as fresh herbs or cheese if desired! Enjoy!
