Ingredients:

60g mushrooms, sliced
1/2 onion, diced
1 garlic clove, minced
120g chicken breast, diced into cubes
1/4 cup vegetable broth or water
2 tablespoons tomato paste
2 tablespoons plain Greek yogurt
1 teaspoon Dijon mustard
Salt and pepper to taste

Cooking Instructions:

Heat a large skillet over medium heat. Add the mushrooms and onion and cook until softened. Add the garlic and cook for an additional minute.
Add the chicken cubes to the skillet and cook until lightly browned on all sides. Pour in the vegetable broth or water and bring to a simmer. Simmer for 5 minutes or until the chicken is cooked through.
In a small bowl mix together the tomato paste, Greek yogurt, Dijon mustard, salt and pepper until combined. Pour this mixture into the skillet with the chicken and vegetables and stir to combine. Simmer for an additional 5 minutes or until sauce has thickened slightly. Serve over cooked rice or noodles if desired.
