Ingredients:

100g lean ground beef
1 small eggplant (about 200g), diced into 1cm cubes
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
2 tablespoons tomato paste
2 tablespoons balsamic vinegar
½ teaspoon dried oregano
½ teaspoon dried basil
¼ teaspoon ground black pepper
¼ teaspoon sea salt

Cooking Instructions:

Preheat oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef until browned. Drain off any excess fat.
Add the eggplant, onion, garlic and bell pepper to the skillet and cook for 5 minutes or until vegetables are softened.
Stir in the tomato paste, balsamic vinegar, oregano, basil, black pepper and salt. Cook for an additional 3 minutes or until all ingredients are combined and heated through.
Transfer the mixture to an oven-safe baking dish and bake for 30 minutes or until eggplant is tender.
