Ingredients:

60g rice noodles
1/2 teaspoon vegetable oil
1/2 teaspoon garlic, minced
1/4 teaspoon ginger, minced
1/4 teaspoon red chili flakes (optional)
250ml vegetable stock or water
2 tablespoons soy sauce or fish sauce (optional)
2 tablespoons lime juice
2 tablespoons fresh coriander leaves, chopped
2 tablespoons fresh basil leaves, chopped
2 tablespoons fresh mint leaves, chopped

Cooking Instructions:

Soak the rice noodles in hot water for 10 minutes. Drain and set aside.
Heat the oil in a large pot over medium heat. Add the garlic and ginger and cook for 1 minute until fragrant. Add the chili flakes if using and cook for another minute.
Pour in the vegetable stock or water and bring to a boil. Reduce the heat to low and simmer for 15 minutes.
Add the soy sauce or fish sauce if using and stir to combine. Add the drained noodles to the pot and simmer for 5 minutes until cooked through.
Remove from heat and stir in the lime juice, coriander leaves, basil leaves and mint leaves until combined. Serve hot with extra herbs on top if desired.
