Ingredients:

1 teaspoon of white miso paste
1/2 cup of dashi stock or vegetable stock
1/4 cup of tofu cubes
1/4 cup of sliced mushrooms (shiitake or enoki)
1 teaspoon of soy sauce
2 tablespoons of chopped green onions or chives for garnish (optional)

Cooking Instructions:

In a small pot over medium heat, add the dashi stock or vegetable stock and bring to a boil.
Once boiling, reduce the heat to low and add the miso paste. Stir until the miso paste has dissolved completely.
Add the tofu cubes and mushrooms and simmer for 5 minutes.
Add the soy sauce and stir until combined. Simmer for an additional 5 minutes or until all ingredients are cooked through.
Serve in a bowl with chopped green onions or chives as garnish (optional). Enjoy!
